Quick & Easy Italian Bread Crumbs

Having a child with multiple food allergies has forced me into the world of “creative cooking”. A world I never would have entered on my own accord! I grew up in a Tuna Helper /Sonic Drive-in type household and thought that was how everyone made dinner. If it didn’t come in a box that you add water to and microwave or you couldn’t pick it up on the way home… it must not exist. Oh, I heard the fairy tales of those families that gather around a dinner table with these large meals prepared by the mother that stayed at home all day and cooked with pots, pans, and glass baking dishes, but I never believed it really happened. You can’t believe everything you see on TV, right?!?! So when it comes to the kitchen, I am clueless… just ask my husband! LOL He is the master at creating the best meals and if I weren’t such a picky eater… we’d eat gourmet meals all the time. He’s all too anxious to tell you how much I frustrate him when it comes to food whether it’s eating or cooking… hahaha
Anyhow… back to the bread crumbs. I always thought they came in a can and were made by Progresso. Turns out you can make them yourself and they are way better and less expensive! There are probably hundreds of recipes out there for them, but remember… I’m all about simple & quick!
Two ingredients: One sleeve of Ritz Crackers and Italian seasoning.
Simply place the crackers in a food processor and shake some seasoning on top of them. I probably use 2-3 Tablespoons of seasoning. Hard to say, as I just sprinkle until I think it looks good! :)
Cover (very important step… don’t ask how I know…) and “process”! It doesn’t take but a few seconds and voila… Italian Bread Crumbs!
I store any extras in a jar in the fridge. For those of you that didn’t know about this… you are welcome. The rest of you are laughing at my kitchen abilities! That’s OK… I laugh too!
